- Chicken breast - 250 grams, thinly sliced
- Mushrooms (shiitake or button) - 150 grams, sliced
- Bell pepper (red or green) - 1 medium, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Spring onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the sliced chicken with soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until golden and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
- Add the sliced mushrooms and bell pepper to the skillet, stir-frying for 3-4 minutes until they are tender.
- Return the cooked chicken to the skillet, add the chopped spring onions, and toss everything together for another 2 minutes to heat through.
- Adjust seasoning with salt and pepper if needed, then serve hot over steamed rice or noodles.
