Ingredients

  • Chicken breast - 250 grams, thinly sliced
  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Bell pepper (red or green) - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Spring onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the sliced chicken with soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until golden and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  4. Add the sliced mushrooms and bell pepper to the skillet, stir-frying for 3-4 minutes until they are tender.
  5. Return the cooked chicken to the skillet, add the chopped spring onions, and toss everything together for another 2 minutes to heat through.
  6. Adjust seasoning with salt and pepper if needed, then serve hot over steamed rice or noodles.
