  • Chicken broth (gluten-free) - 500 milliliters
  • Cornstarch - 1 tablespoon
  • Water - 100 milliliters
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the diced chicken breast to the pot and cook for 5-7 minutes, or until the chicken is lightly browned and cooked through.
  3. Stir in the sliced mushrooms and cook for another 3-4 minutes until they soften.
  4. Pour in the chicken broth and bring to a gentle boil. Reduce the heat and let it simmer for 10 minutes.
  5. In a small bowl, mix the cornstarch with 100 ml of water to create a slurry. Gradually add this to the soup while stirring continuously to thicken.
  6. Add the gluten-free soy sauce and season with salt and pepper to taste. Allow the soup to simmer for another 2-3 minutes.
  7. Finally, stir in the chopped green onions before serving.
