- Ginger - 1 teaspoon, grated
- Chicken broth (gluten-free) - 500 milliliters
- Cornstarch - 1 tablespoon
- Water - 100 milliliters
- Soy sauce (gluten-free) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Salt - to taste
- Pepper - to taste
Steps
- In a medium pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the diced chicken breast to the pot and cook for 5-7 minutes, or until the chicken is lightly browned and cooked through.
- Stir in the sliced mushrooms and cook for another 3-4 minutes until they soften.
- Pour in the chicken broth and bring to a gentle boil. Reduce the heat and let it simmer for 10 minutes.
- In a small bowl, mix the cornstarch with 100 ml of water to create a slurry. Gradually add this to the soup while stirring continuously to thicken.
- Add the gluten-free soy sauce and season with salt and pepper to taste. Allow the soup to simmer for another 2-3 minutes.
- Finally, stir in the chopped green onions before serving.
