- Chicken breast - 200 grams, diced
- Mushrooms (shiitake or button) - 150 grams, sliced
- Jasmine rice - 150 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Spring onion - 2 stalks, chopped
- Chicken broth - 300 ml
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant (about 1 minute).
- Add the diced chicken breast to the skillet and stir-fry for about 5-7 minutes until the chicken is cooked through and slightly golden.
- Stir in the sliced mushrooms and cook for an additional 3-4 minutes until they soften.
- Pour in the soy sauce and sesame oil, mixing well to coat the chicken and mushrooms. Season with salt and pepper to taste.
- Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and mushrooms.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped spring onions before serving.
