Ingredients

  • Chicken breast - 200 grams, diced
  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Jasmine rice - 150 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Spring onion - 2 stalks, chopped
  • Chicken broth - 300 ml
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it for 15 minutes.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant (about 1 minute).
  3. Add the diced chicken breast to the skillet and stir-fry for about 5-7 minutes until the chicken is cooked through and slightly golden.
  4. Stir in the sliced mushrooms and cook for an additional 3-4 minutes until they soften.
  5. Pour in the soy sauce and sesame oil, mixing well to coat the chicken and mushrooms. Season with salt and pepper to taste.
  6. Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and mushrooms.
  7. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped spring onions before serving.
