- Chicken breast - 250 grams, diced
- Cashew nuts - 100 grams, roasted
- Bell pepper (red) - 1 medium, sliced
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Spring onions - 2, chopped (for garnish)
Steps
- In a bowl, combine diced chicken breast with soy sauce, oyster sauce, cornstarch, salt, and black pepper. Marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the marinated chicken and stir-fry until golden brown, about 5-7 minutes. Remove the chicken and set aside.
- In the same pan, add another tablespoon of vegetable oil. Add minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add sliced onion and bell pepper to the pan, cooking for 3-4 minutes until they are slightly tender.
- Return the cooked chicken to the pan, along with the roasted cashew nuts. Stir well to combine all ingredients.
- Cook for an additional 2-3 minutes to heat through, then adjust seasoning if necessary.
- Garnish with chopped spring onions and serve hot with rice.
