Ingredients

  • Chicken breast - 250 grams, diced
  • Cashew nuts - 100 grams, roasted
  • Bell pepper (red) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions - 2, chopped (for garnish)

Steps

  1. In a bowl, combine diced chicken breast with soy sauce, oyster sauce, cornstarch, salt, and black pepper. Marinate for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the marinated chicken and stir-fry until golden brown, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same pan, add another tablespoon of vegetable oil. Add minced garlic and ginger, stirring for about 30 seconds until fragrant.
  4. Add sliced onion and bell pepper to the pan, cooking for 3-4 minutes until they are slightly tender.
  5. Return the cooked chicken to the pan, along with the roasted cashew nuts. Stir well to combine all ingredients.
  6. Cook for an additional 2-3 minutes to heat through, then adjust seasoning if necessary.
  7. Garnish with chopped spring onions and serve hot with rice.
