Ingredients

  • Chicken breast - 300 grams, thinly sliced
  • Broccoli florets - 200 grams
  • Carrot - 1 medium, julienned
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, minced
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks, chopped (for garnish)

Steps

  1. In a bowl, combine the sliced chicken with cornstarch, 1 tablespoon of soy sauce, and a pinch of salt and pepper. Let it marinate for about 10 minutes.
  2. In a wok or large frying pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the remaining vegetable oil. Add minced garlic and ginger, sautéing for 30 seconds until fragrant.
  4. Add the broccoli florets and julienned carrot to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Return the cooked chicken to the pan and mix well with the vegetables.
  6. In a small bowl, mix the remaining soy sauce, oyster sauce, sesame oil, and water. Pour the sauce over the chicken and vegetables, stirring to combine.
  7. Cook for another 2-3 minutes until everything is heated through and well-coated with the sauce.
  8. Serve hot, garnished with chopped green onions.
