Ingredients
- Cooked jasmine rice - 2 cups
- Boneless chicken breast - 200 grams, diced
- Broccoli florets - 150 grams
- Carrot - 1 medium, diced
- Green onion - 2 stalks, sliced
- Garlic - 2 cloves, minced
- Egg - 1 large
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast to the skillet, season with salt and black pepper, and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil, then add the minced garlic and diced carrot. Stir-fry for 2 minutes until fragrant.
- Add the broccoli florets and stir-fry for another 3 minutes until they are bright green and tender-crisp.
- Push the vegetables to one side of the skillet and crack the egg into the other side. Scramble the egg until cooked, then mix it with the vegetables.
- Add the cooked jasmine rice to the skillet, followed by the cooked chicken, soy sauce, oyster sauce, and sesame oil. Stir everything together until well combined and heated through, about 3-4 minutes.
- Finally, stir in the sliced green onions, adjusting seasoning with more salt and pepper if needed. Serve hot.
