Ingredients

  • Cooked jasmine rice - 2 cups
  • Boneless chicken breast - 200 grams, diced
  • Broccoli florets - 150 grams
  • Carrot - 1 medium, diced
  • Green onion - 2 stalks, sliced
  • Garlic - 2 cloves, minced
  • Egg - 1 large
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast to the skillet, season with salt and black pepper, and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil, then add the minced garlic and diced carrot. Stir-fry for 2 minutes until fragrant.
  4. Add the broccoli florets and stir-fry for another 3 minutes until they are bright green and tender-crisp.
  5. Push the vegetables to one side of the skillet and crack the egg into the other side. Scramble the egg until cooked, then mix it with the vegetables.
  6. Add the cooked jasmine rice to the skillet, followed by the cooked chicken, soy sauce, oyster sauce, and sesame oil. Stir everything together until well combined and heated through, about 3-4 minutes.
  7. Finally, stir in the sliced green onions, adjusting seasoning with more salt and pepper if needed. Serve hot.
