  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the chayote using a spiralizer or a vegetable peeler to create noodle-like strands.
  2. Heat olive oil in a large skillet or wok over medium heat.
  3. Add minced garlic and ginger to the skillet, stirring for 30 seconds until fragrant.
  4. Add sliced bell pepper, julienned carrot, and sugar snap peas to the skillet, cooking for about 3-4 minutes until tender-crisp.
  5. Stir in the spiralized chayote noodles and cook for another 3-4 minutes until they are heated through.
  6. Pour in the soy sauce and sesame oil, mixing well to coat the vegetables and noodles evenly.
  7. Season with salt and black pepper to taste.
  8. Remove from heat and sprinkle chopped green onions and sesame seeds on top before serving.
