Ingredients

  • Quail - 2 whole (about 200-250g each)
  • Soy sauce - 3 tablespoons
  • Shaoxing wine (Chinese cooking wine) - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Five-spice powder - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Green onions - 2, chopped (for garnish)
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. Prepare the quails by cleaning and removing any feathers. Pat them dry with paper towels.
  2. In a bowl, combine soy sauce, Shaoxing wine, brown sugar, minced garlic, grated ginger, five-spice powder, sesame oil, black pepper, and chili flakes to create a marinade.
  3. Place the quails in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, then marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
  4. Preheat your charcoal grill to medium-high heat. Once the coals are ready, brush the grill grates with oil to prevent sticking.
  5. Remove the quails from the marinade, letting the excess drip off. Discard the marinade.
  6. Place the quails on the grill, breast side down, and cook for about 5-7 minutes. Flip them over and grill for an additional 5-7 minutes or until the internal temperature reaches 74°C (165°F) and the skin is crispy.
  7. Once cooked, remove the quails from the grill and let them rest for a few minutes.
  8. Serve the grilled quails garnished with chopped green onions and cilantro.
