- Shaoxing wine (Chinese cooking wine) - 2 tablespoons
- Brown sugar - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Five-spice powder - 1 teaspoon
- Sesame oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/2 teaspoon (optional)
- Green onions - 2, chopped (for garnish)
- Cilantro - a handful, chopped (for garnish)
Steps
- Prepare the quails by cleaning and removing any feathers. Pat them dry with paper towels.
- In a bowl, combine soy sauce, Shaoxing wine, brown sugar, minced garlic, grated ginger, five-spice powder, sesame oil, black pepper, and chili flakes to create a marinade.
- Place the quails in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, then marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat your charcoal grill to medium-high heat. Once the coals are ready, brush the grill grates with oil to prevent sticking.
- Remove the quails from the marinade, letting the excess drip off. Discard the marinade.
- Place the quails on the grill, breast side down, and cook for about 5-7 minutes. Flip them over and grill for an additional 5-7 minutes or until the internal temperature reaches 74°C (165°F) and the skin is crispy.
- Once cooked, remove the quails from the grill and let them rest for a few minutes.
- Serve the grilled quails garnished with chopped green onions and cilantro.
