Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Chicken breast - 100 grams, diced
  • Ginger - 1 tbsp, minced
  • Garlic - 1 clove, minced
  • Salt - 1/2 tsp
  • White pepper - 1/4 tsp
  • Chopped green onions - 2 tbsp
  • Sesame oil - 1 tsp
  • Soy sauce (gluten-free) - 1 tbsp
  • Cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch; drain well.
  2. In a large pot, combine the rinsed rice and 1 liter of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and simmer for about 30 minutes, stirring occasionally, until the rice is soft and the mixture thickens into a porridge-like consistency.
  4. In a separate pan, heat a small amount of oil over medium heat. Add minced ginger and garlic, sautéing until fragrant.
  5. Add the diced chicken to the pan and cook until no longer pink, about 5-7 minutes.
  6. Stir the cooked chicken mixture into the rice porridge. Season with salt, white pepper, and gluten-free soy sauce, mixing well.
  7. Let it simmer for an additional 5 minutes to meld the flavors.
  8. Serve hot, drizzled with sesame oil and garnished with chopped green onions and cilantro.
