Ingredients
- Jasmine rice - 100 grams
- Water - 1 liter
- Chicken breast - 100 grams, diced
- Ginger - 1 tbsp, minced
- Garlic - 1 clove, minced
- Salt - 1/2 tsp
- White pepper - 1/4 tsp
- Chopped green onions - 2 tbsp
- Sesame oil - 1 tsp
- Soy sauce (gluten-free) - 1 tbsp
- Cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch; drain well.
- In a large pot, combine the rinsed rice and 1 liter of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer for about 30 minutes, stirring occasionally, until the rice is soft and the mixture thickens into a porridge-like consistency.
- In a separate pan, heat a small amount of oil over medium heat. Add minced ginger and garlic, sautéing until fragrant.
- Add the diced chicken to the pan and cook until no longer pink, about 5-7 minutes.
- Stir the cooked chicken mixture into the rice porridge. Season with salt, white pepper, and gluten-free soy sauce, mixing well.
- Let it simmer for an additional 5 minutes to meld the flavors.
- Serve hot, drizzled with sesame oil and garnished with chopped green onions and cilantro.
