Ingredients

  • Rice noodles - 200 grams
  • Vegetable broth - 500 milliliters

  • Ginger - 1 inch, sliced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Bok choy - 100 grams, chopped
  • Cilantro - a handful, for garnish
  • Red chili - 1, sliced (optional)

Steps

  1. Soak the rice noodles in warm water for about 20 minutes or until they become soft, then drain and set aside.
  2. In a pot, heat the vegetable broth over medium heat and add minced garlic and ginger. Allow it to simmer for 5 minutes to infuse the flavors.
  3. Add the sliced mushrooms and bok choy to the broth, cooking for another 5 minutes until the vegetables are tender.
