- Goose leg - 500 grams
- Garlic - 4 cloves, minced
- Ginger - 2 cm piece, sliced
- Soy sauce (or coconut aminos for Paleo) - 60 ml
- Shaoxing wine (or dry sherry) - 30 ml
- Five-spice powder - 1 teaspoon
- Brown sugar (or coconut sugar) - 1 tablespoon
- Star anise - 2 pieces
- Water - 500 ml
- Salt - 1 teaspoon
- Spring onion - 2 stalks, chopped
Steps
- In a large pot, combine water, soy sauce, Shaoxing wine, minced garlic, sliced ginger, five-spice powder, brown sugar, star anise, and salt. Bring to a boil.
- Once boiling, add the goose leg to the pot and reduce the heat to a simmer. Cover and let it simmer for 1 hour.
- After 1 hour, remove the goose leg and let it cool slightly. Reserve the marinade for later use.
- Preheat a grill or barbecue to medium-high heat.
- Once the goose leg is cool enough to handle, score the skin lightly with a knife to help the fat render during cooking.
- Place the goose on the grill and cook for about 15-20 minutes, turning occasionally, until the skin is crispy and golden brown.
- During the last few minutes of cooking, brush the reserved marinade over the goose leg for added flavor.
- Remove from the grill, let it rest for 5 minutes, then slice and serve garnished with chopped spring onion.
