  • Oyster sauce (gluten-free) - 30 ml
  • Shaoxing wine - 30 ml
  • Five-spice powder - 1 teaspoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Spring onions - 2, chopped for garnish

Steps

  1. In a large bowl, combine the soy sauce, oyster sauce, Shaoxing wine, five-spice powder, minced garlic, ginger, sugar, black pepper, and sesame oil to create a marinade.
  2. Add the chopped goose pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the oven to 200°C (400°F). Line a baking tray with foil and place a wire rack on top.
  4. Arrange the marinated goose pieces on the wire rack, ensuring they are not touching each other.
  5. Roast the goose in the preheated oven for 45-50 minutes, turning halfway through, until the skin is crispy and the meat is cooked through.
  6. Remove the goose from the oven and let it rest for 10 minutes before slicing.
