Ingredients
- Duck - 1 whole (about 1.2 kg)
- Soy sauce (gluten-free) - 60 ml
- Hoisin sauce (gluten-free) - 30 ml
- Rice wine - 30 ml
- Five spice powder - 1 teaspoon
- Brown sugar - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Spring onions - 2, chopped
- Sesame oil - 1 tablespoon
- Water - 250 ml
Steps
- Rinse the duck under cold water and pat dry with paper towels.
- In a mixing bowl, combine soy sauce, hoisin sauce, rice wine, five spice powder, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
- Rub the marinade all over the duck, making sure to get it inside the cavity as well. Place the duck in a large resealable bag or a dish, cover, and marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat the oven to 200°C (400°F).
- Remove the duck from the marinade and place it on a roasting rack in a baking dish. Reserve the marinade for basting.
- Pour the water into the baking dish to keep the duck moist during cooking.
- Roast the duck in the preheated oven for about 60-70 minutes, basting every 20 minutes with the reserved marinade.
- Once the duck is golden brown and cooked through, remove it from the oven and let it rest for 10 minutes before carving.
- Serve the duck sliced, garnished with chopped spring onions, and enjoy!
