  • Pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Soak the rice noodles in warm water for about 10 minutes or until softened, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  4. Add the julienned carrot, sliced bell pepper, and zucchini to the pan, stir-frying for about 3-4 minutes until the vegetables are tender but still crisp.
  5. Add the soaked rice noodles to the pan, along with the gluten-free soy sauce, sesame oil, salt, pepper, and chili flakes if using.
  6. Toss everything together gently for 2-3 minutes, ensuring the noodles are well coated with the sauce and heated through.
  7. Finally, add the chopped green onions, toss again, and serve immediately.
