Ingredients

  • Rice noodles - 200 grams
  • Bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Green onion (chopped) - 2 stalks
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro (for garnish) - a handful

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant.
  4. Add the sliced bell pepper and julienned carrot to the skillet, and stir-fry for about 3-4 minutes until slightly softened.
  5. Add the cooked rice noodles to the skillet, followed by gluten-free soy sauce, sesame oil, red pepper flakes, salt, and black pepper.
  6. Toss all ingredients together for another 2-3 minutes until everything is well combined and heated through.
  7. Remove from heat, garnish with chopped green onions and cilantro, and serve immediately.
