- Soy sauce (gluten-free) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon

Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant.
- Add the sliced bell pepper and julienned carrot to the skillet, and stir-fry for about 3-4 minutes until slightly softened.
- Add the cooked rice noodles to the skillet, followed by gluten-free soy sauce, sesame oil, red pepper flakes, salt, and black pepper.
- Toss all ingredients together for another 2-3 minutes until everything is well combined and heated through.
