Ingredients

  • Chow Mein noodles - 200 grams
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Snow peas - 100 grams, trimmed
  • Tofu - 150 grams, cubed
  • Cornstarch - 1 tablespoon
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Cook the Chow Mein noodles according to package instructions, drain, and set aside.
  2. In a bowl, toss the cubed tofu with cornstarch until evenly coated.
  3. Heat sesame oil in a large pan or wok over medium heat, and add the tofu. Fry until golden brown on all sides, about 5-7 minutes. Remove tofu and set aside.
  4. In the same pan, add minced garlic and stir-fry for 30 seconds until fragrant.
  5. Add the carrot, bell pepper, and snow peas, and stir-fry for 3-4 minutes until just tender.
  6. Return the tofu to the pan, add the cooked noodles, soy sauce, vegetable broth, black pepper, and salt. Stir everything together and cook for an additional 2-3 minutes until heated through.
  7. Garnish with chopped green onions before serving.
