Ingredients

  • Pork belly - 200 grams, diced
  • Water - 500 milliliters
  • Ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Star anise - 1 whole
  • Soy sauce (gluten-free) - 30 milliliters
  • Shaoxing wine - 15 milliliters
  • Green onions - 2 stalks, chopped
  • Coriander - a handful, chopped
  • Sesame oil - 5 milliliters
  • Salt - to taste
  • White pepper - to taste

Steps

  1. In a pot, add the diced pork belly and water, bringing it to a boil over medium heat.
  2. Once boiling, skim off any foam that forms on the surface to keep the broth clear.
  3. Add the ginger, garlic, star anise, soy sauce, and Shaoxing wine to the pot.
  4. Reduce the heat to low and let it simmer for about 20 minutes until the pork is tender.
  5. Season with salt and white pepper to taste.
