- Egg - 1, beaten

- Sesame oil - 1 teaspoon

Steps
- Cook the rice noodles according to package instructions, drain, and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper to the skillet, stir-frying for 3-4 minutes until they begin to soften.
- Push the vegetables to one side of the skillet and pour the beaten egg into the empty side, scrambling it until fully cooked.
