Ingredients

  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Egg - 1, beaten
  • Soy sauce - 2 tablespoons (gluten-free)
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add the julienned carrot and sliced bell pepper to the skillet, stir-frying for 3-4 minutes until they begin to soften.
  5. Push the vegetables to one side of the skillet and pour the beaten egg into the empty side, scrambling it until fully cooked.
  6. Add the cooked rice noodles to the skillet along with the soy sauce, sesame oil, salt, and black pepper. Toss everything together and stir-fry for an additional 2-3 minutes until heated through.
  7. Stir in the chopped green onions just before serving.
