Ingredients

  • Cooked jasmine rice - 300 grams (preferably day-old)
  • Carrot - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish (optional)

Steps

  1. Heat the vegetable oil in a large non-stick skillet or wok over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrot and bell pepper to the skillet and stir-fry for 3-4 minutes until they start to soften.
  4. Stir in the green peas and cooked jasmine rice, breaking apart any clumps of rice.
  5. Pour in the soy sauce and sesame oil, mixing well to ensure the rice is evenly coated.
  6. Cook for an additional 5-7 minutes, stirring frequently, until the rice is heated through and slightly crispy.
  7. Season with salt and black pepper to taste.
  8. Remove from heat and stir in the chopped green onions.
  9. Serve hot, garnished with fresh cilantro if desired.
