- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onions - 2, chopped
- Snow peas - 100 grams
- Egg - 1, beaten
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- Begin by grating the cauliflower into rice-sized pieces using a food processor or box grater. Set aside.
- In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and grated ginger, cooking until fragrant (about 1 minute).
- Add sliced bell pepper, julienned carrot, and snow peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Push the vegetables to one side of the skillet, pour the beaten egg into the other side, and scramble until fully cooked.
- Add the grated cauliflower to the skillet along with soy sauce and sesame oil. Toss everything together and cook for an additional 5-7 minutes, stirring frequently, until the cauliflower is tender.
- Season with salt and black pepper to taste. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
