Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower and cut it into florets.
- Pulse the cauliflower florets in a food processor until it resembles rice or couscous.
- Transfer the cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the cauliflower rice, egg, 50 grams of mozzarella cheese, green onion, soy sauce, sesame oil, garlic, salt, and pepper. Mix well to combine.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add the diced carrot, peas, and bell pepper, sautéing for 3-4 minutes until tender.
- If using, add the cooked chicken or shrimp to the skillet and stir until heated through.
- Remove the crust from the oven and top it with the sautéed vegetable mixture and the remaining 50 grams of mozzarella cheese.
- Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Slice and serve hot, garnished with additional green onions if desired.
