Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100 grams

  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Carrot - 50 grams, diced
  • Frozen peas - 50 grams
  • Bell pepper - 50 grams, diced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cooked chicken or shrimp (optional) - 100 grams, diced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets.
  3. Pulse the cauliflower florets in a food processor until it resembles rice or couscous.
  4. Transfer the cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
  5. In a mixing bowl, combine the cauliflower rice, egg, 50 grams of mozzarella cheese, green onion, soy sauce, sesame oil, garlic, salt, and pepper. Mix well to combine.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  8. While the crust is baking, heat olive oil in a skillet over medium heat. Add the diced carrot, peas, and bell pepper, sautéing for 3-4 minutes until tender.
  9. If using, add the cooked chicken or shrimp to the skillet and stir until heated through.
  10. Remove the crust from the oven and top it with the sautéed vegetable mixture and the remaining 50 grams of mozzarella cheese.
  11. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  12. Slice and serve hot, garnished with additional green onions if desired.
