Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Snow peas - 100 grams, trimmed
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
- While the rice is cooking, heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and ginger to the pan and stir-fry for about 30 seconds until fragrant.
- Add the diced carrot and bell pepper to the pan and stir-fry for 3-4 minutes until they begin to soften.
- Add the trimmed snow peas and chopped green onions to the pan, and stir-fry for an additional 2-3 minutes.
- Once the vegetables are cooked but still crisp, add the cooked rice to the pan.
- Pour 2 tablespoons of soy sauce and 1 teaspoon of sesame oil over the rice and vegetables, stirring well to combine. Season with salt and black pepper to taste.
- Cook for an additional 2 minutes, stirring frequently, until everything is heated through.
- Serve hot, garnished with extra green onions if desired.
