Ingredients

  • White fish fillets (e.g., cod or tilapia) - 300 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 100 ml (for frying)
  • Pineapple chunks - 100 grams
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Rice vinegar - 2 tablespoons
  • Sugar - 2 tablespoons
  • Gluten-free soy sauce - 1 tablespoon
  • Water - 50 ml
  • Green onions - 2, chopped (for garnish)

Steps

  1. Begin by patting the fish fillets dry with paper towels and cutting them into bite-sized pieces.
  2. In a bowl, mix the cornstarch, salt, and black pepper. Dredge the fish pieces in the cornstarch mixture, ensuring they are well-coated.
  3. In another bowl, beat the egg and then dip the coated fish pieces into the egg, allowing any excess to drip off.
  4. Heat vegetable oil in a large frying pan over medium heat. Fry the fish pieces in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. In the same pan, add a little more oil if necessary, and sauté the onion, garlic, and ginger until fragrant, about 2 minutes.
  6. Add the diced bell peppers and pineapple chunks to the pan, and stir-fry for another 2-3 minutes.
  7. In a small bowl, combine rice vinegar, sugar, gluten-free soy sauce, and water, then pour the mixture into the pan. Stir well and simmer for 2 minutes until the sauce thickens slightly.
  8. Carefully add the fried fish back into the pan, tossing gently to coat the fish in the sauce. Cook for an additional minute to heat through.
  9. Serve hot, garnished with chopped green onions.
