Steps
- Begin by patting the fish fillets dry with paper towels and cutting them into bite-sized pieces.
- In a bowl, mix the cornstarch, salt, and black pepper. Dredge the fish pieces in the cornstarch mixture, ensuring they are well-coated.
- In another bowl, beat the egg and then dip the coated fish pieces into the egg, allowing any excess to drip off.
- Heat vegetable oil in a large frying pan over medium heat. Fry the fish pieces in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- In the same pan, add a little more oil if necessary, and sauté the onion, garlic, and ginger until fragrant, about 2 minutes.
- Add the diced bell peppers and pineapple chunks to the pan, and stir-fry for another 2-3 minutes.
- In a small bowl, combine rice vinegar, sugar, gluten-free soy sauce, and water, then pour the mixture into the pan. Stir well and simmer for 2 minutes until the sauce thickens slightly.
- Carefully add the fried fish back into the pan, tossing gently to coat the fish in the sauce. Cook for an additional minute to heat through.
