Ingredients

  • Firm tofu - 200 grams, cubed
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 100 grams, canned in juice
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a bowl, mix the soy sauce, rice vinegar, brown sugar, and cornstarch to create the sweet and sour sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Sauté the sliced onion, garlic, and ginger until fragrant, about 2 minutes.
  4. Add the diced red and green bell peppers and cook for an additional 3-4 minutes until slightly softened.
  5. Stir in the pineapple chunks and the sweet and sour sauce. Bring to a simmer and cook for 2-3 minutes until the sauce thickens.
  6. Add the cooked tofu back to the pan, stirring gently to coat everything with the sauce. Season with salt and black pepper to taste.
  7. Remove from heat and garnish with sesame seeds before serving.
