- Firm tofu - 200 grams, cubed
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Pineapple chunks - 100 grams, canned in juice
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, minced
- Soy sauce (kosher) - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Brown sugar - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- In a bowl, mix the soy sauce, rice vinegar, brown sugar, and cornstarch to create the sweet and sour sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
- In the same pan, add the remaining tablespoon of oil. Sauté the sliced onion, garlic, and ginger until fragrant, about 2 minutes.
- Add the diced red and green bell peppers and cook for an additional 3-4 minutes until slightly softened.
- Stir in the pineapple chunks and the sweet and sour sauce. Bring to a simmer and cook for 2-3 minutes until the sauce thickens.
- Add the cooked tofu back to the pan, stirring gently to coat everything with the sauce. Season with salt and black pepper to taste.
- Remove from heat and garnish with sesame seeds before serving.
