Ingredients

  • Pork tenderloin - 200 grams, thinly sliced
  • Egg noodles - 150 grams
  • Bell pepper (red) - 1, sliced
  • Carrot - 1, julienned
  • Onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Ketchup - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Green onions - 2, chopped for garnish

Steps

  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. In a bowl, mix the soy sauce, rice vinegar, brown sugar, ketchup, and cornstarch to create the sweet and sour sauce.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the pork slices and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil. Stir-fry the garlic, ginger, onion, bell pepper, and carrot for about 3-4 minutes until they are slightly softened.
  5. Return the cooked pork to the skillet and add the sweet and sour sauce. Stir well to coat the pork and vegetables, cooking for an additional 2-3 minutes until the sauce thickens.
  6. Add the cooked noodles to the skillet, tossing everything together to combine and heat through.
  7. Serve hot, garnished with chopped green onions.
