  • Pork chops - 2 pieces (about 200g each)
  • Cornstarch - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cooking oil - 3 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Pineapple chunks - 1/2 cup (canned in juice)
  • Rice vinegar - 2 tablespoons
  • Honey - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Tomato ketchup - 1 tablespoon
  • Water - 1/4 cup
  • Green onions - 2 stalks, chopped (for garnish)

Steps

  1. Start by seasoning the pork chops with salt and black pepper. Coat both sides with cornstarch, shaking off any excess.
  2. In a large skillet or wok, heat 2 tablespoons of cooking oil over medium-high heat. Add the pork chops and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the sliced onion, diced red and green bell peppers, minced garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.
  4. Add the pineapple chunks to the skillet and cook for another 2 minutes.
  5. In a small bowl, mix together rice vinegar, honey, soy sauce, tomato ketchup, and water. Pour this mixture over the vegetables in the skillet and bring to a simmer.
  6. Return the cooked pork chops to the skillet, coating them with the sauce. Let simmer for an additional 3-4 minutes, allowing the flavors to meld.
  7. Serve hot, garnished with chopped green onions.
