- Rice vinegar - 2 tablespoons

- Ketchup - 2 tablespoons
- Water - 100 ml

Steps
- In a bowl, coat the pork pieces with cornstarch, ensuring they are evenly covered. Let it sit for about 10 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the pork in batches, frying until golden brown and cooked through (about 4-5 minutes per batch). Remove the pork and set aside.
- In the same skillet, add the remaining tablespoon of oil. Sauté the garlic and ginger until fragrant (about 30 seconds).
- Add the diced bell peppers and pineapple chunks to the skillet, stir-frying for about 2-3 minutes until they are slightly tender.
- In a small bowl, combine the soy sauce, rice vinegar, sugar, ketchup, and water. Pour this mixture into the skillet and bring to a simmer.
- Return the cooked pork to the skillet, stirring well to coat in the sauce. Allow it to simmer for an additional 2-3 minutes until the sauce thickens slightly.
- Drizzle with sesame oil, season with salt and black pepper to taste, and serve immediately.
