Ingredients

  • Pork tenderloin - 250 grams, cut into bite-sized pieces
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 3 tablespoons (for frying)
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 100 grams, drained
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Sugar - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Water - 100 ml
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, coat the pork pieces with cornstarch, ensuring they are evenly covered. Let it sit for about 10 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the pork in batches, frying until golden brown and cooked through (about 4-5 minutes per batch). Remove the pork and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Sauté the garlic and ginger until fragrant (about 30 seconds).
  4. Add the diced bell peppers and pineapple chunks to the skillet, stir-frying for about 2-3 minutes until they are slightly tender.
  5. In a small bowl, combine the soy sauce, rice vinegar, sugar, ketchup, and water. Pour this mixture into the skillet and bring to a simmer.
  6. Return the cooked pork to the skillet, stirring well to coat in the sauce. Allow it to simmer for an additional 2-3 minutes until the sauce thickens slightly.
  7. Drizzle with sesame oil, season with salt and black pepper to taste, and serve immediately.
