  • Pineapple chunks - 100 grams, drained
  • Gluten-free soy sauce - 2 tablespoons
  • Honey - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Sesame oil - 1 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. In a bowl, combine gluten-free soy sauce, honey, rice vinegar, cornstarch, minced garlic, minced ginger, and sesame oil to create the marinade.
  2. Add the chicken cubes to the marinade and let it sit for 15 minutes to absorb the flavors.
  3. Preheat the grill or grill pan over medium heat.
  4. Thread the marinated chicken, red bell pepper, green bell pepper, and pineapple chunks onto the skewers, alternating the ingredients.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
