- Pineapple chunks - 100 grams, drained
- Gluten-free soy sauce - 2 tablespoons
- Honey - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Cornstarch - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Sesame oil - 1 teaspoon
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- In a bowl, combine gluten-free soy sauce, honey, rice vinegar, cornstarch, minced garlic, minced ginger, and sesame oil to create the marinade.
- Add the chicken cubes to the marinade and let it sit for 15 minutes to absorb the flavors.
- Preheat the grill or grill pan over medium heat.
- Thread the marinated chicken, red bell pepper, green bell pepper, and pineapple chunks onto the skewers, alternating the ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
