Ingredients

  • Chicken breast - 300 grams
  • Cornstarch - 4 tablespoons
  • Vegetable oil - 1/4 cup (for frying)
  • Bell pepper (red) - 1 medium, chopped
  • Bell pepper (green) - 1 medium, chopped
  • Pineapple chunks - 100 grams (canned or fresh)
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Sugar - 2 tablespoons
  • Ketchup - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 1/4 cup
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onion - 1 stalk, chopped (for garnish)

Steps

  1. Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
  2. Coat the chicken pieces evenly with cornstarch, shaking off any excess.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Fry the chicken pieces in batches until golden brown and cooked through, about 4-5 minutes per batch. Remove and drain on paper towels.
  5. In the same skillet, add the chopped bell peppers and sauté for 2-3 minutes until slightly tender.
  6. In a bowl, mix together the soy sauce, rice vinegar, sugar, ketchup, minced garlic, and water to create the sweet and sour sauce.
  7. Pour the sauce over the sautéed bell peppers and add the pineapple chunks. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  8. Add the fried chicken to the skillet and toss everything together to coat the chicken in the sauce.
  9. Garnish with sesame seeds and chopped green onion before serving.
  10. Serve hot with steamed rice or noodles.
