Ingredients

  • Chicken breast - 300 grams, sliced thinly
  • Soy sauce - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Bell pepper (red or green) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Snow peas - 100 grams, trimmed
  • Onion - 1 medium, sliced
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Water - 100 ml
  • Green onions - 2 stalks, chopped for garnish

Steps

  1. In a bowl, combine sliced chicken with soy sauce and cornstarch. Mix well and let marinate for about 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add the sliced bell pepper, carrot, snow peas, and onion to the pan. Stir-fry for about 5 minutes until the vegetables are just tender but still crisp.
  5. Return the cooked chicken to the pan, and add the oyster sauce, sesame oil, and water. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. Serve hot, garnished with chopped green onions.
