  • Sole fillets - 300 grams

  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Cooking wine (Shaoxing) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 10 grams, for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the sole fillets by rinsing them under cold water and patting dry with paper towels. Season both sides with salt and black pepper.
  2. Place the sole fillets in a heatproof dish that fits inside your steamer.
  3. Sprinkle the julienned ginger and minced garlic evenly over the fillets.
  4. In a small bowl, combine soy sauce, sesame oil, and cooking wine. Pour this mixture over the fish.
  5. Top the fillets with sliced scallions.
  6. Fill the steamer with water, bringing it to a boil. Once boiling, place the dish with the fish in the steamer basket, cover, and steam for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Once done, carefully remove the dish from the steamer and garnish with fresh cilantro before serving.
