- Lobster - 2 (approximately 500g each)
- Fresh ginger - 30g, thinly sliced
- Scallions - 2, chopped
- Soy sauce - 30ml
- Sesame oil - 10ml
- Garlic - 2 cloves, minced
- Rice wine (Shaoxing) - 15ml
- Coriander leaves - for garnish
Steps
- Fill a steamer pot with water and bring it to a boil over high heat.
- While the water is heating, prepare the lobsters by placing them in the freezer for 15 minutes to calm them down, then split them in half lengthwise.
- Rinse the lobster halves under cold water and place them in a heatproof dish, shell side down.
- Spread the sliced ginger and minced garlic evenly over the lobster meat, and sprinkle the chopped scallions on top.
- In a small bowl, mix the soy sauce, sesame oil, and rice wine together. Drizzle this mixture over the lobsters.
- Once the water is boiling, place the dish with the lobsters into the steamer basket and cover it tightly.
- Steam the lobsters for about 15-20 minutes, or until the meat is opaque and cooked through.
- Remove the lobsters from the steamer and garnish with fresh coriander leaves before serving.
