- Live crab - 500 grams
- Fresh ginger - 20 grams, sliced
- Scallions - 2, cut into 5 cm lengths
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Chinese rice wine (Shaoxing wine) - 1 tablespoon
- Salt - 1/2 teaspoon
- White pepper - 1/4 teaspoon
- Water - 1 liter, for steaming
Steps
- Prepare the crab by rinsing it under cold water and removing the gills and the stomach sac. Cut the crab in half and remove the claws if desired.
- Place the cleaned crab in a heatproof dish suitable for steaming.
- Scatter the sliced ginger and scallions evenly over the crab.
- In a small bowl, combine soy sauce, sesame oil, rice wine, salt, and white pepper. Pour this mixture over the crab.
- Fill a steamer pot with 1 liter of water and bring to a boil.
- Once boiling, place the dish with the crab in the steamer and cover with a lid. Steam for 15-20 minutes or until the crab is fully cooked and turns bright orange.
- Remove the dish from the steamer carefully and let it cool for a few minutes before serving.
