Ingredients

  • Live crab - 500 grams
  • Fresh ginger - 20 grams, sliced
  • Scallions - 2, cut into 5 cm lengths
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chinese rice wine (Shaoxing wine) - 1 tablespoon
  • Salt - 1/2 teaspoon
  • White pepper - 1/4 teaspoon
  • Water - 1 liter, for steaming

Steps

  1. Prepare the crab by rinsing it under cold water and removing the gills and the stomach sac. Cut the crab in half and remove the claws if desired.
  2. Place the cleaned crab in a heatproof dish suitable for steaming.
  3. Scatter the sliced ginger and scallions evenly over the crab.
  4. In a small bowl, combine soy sauce, sesame oil, rice wine, salt, and white pepper. Pour this mixture over the crab.
  5. Fill a steamer pot with 1 liter of water and bring to a boil.
  6. Once boiling, place the dish with the crab in the steamer and cover with a lid. Steam for 15-20 minutes or until the crab is fully cooked and turns bright orange.
  7. Remove the dish from the steamer carefully and let it cool for a few minutes before serving.
