Ingredients
- Fresh scallops - 300 grams
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Red bell pepper - 1/2, julienned
- Cauliflower rice - 200 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the scallops under cold water and pat dry with paper towels.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the scallops to the skillet and season with salt and pepper. Sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add the julienned red bell pepper and cook for another 2 minutes until slightly softened.
- Stir in the soy sauce and sesame oil, mixing well.
- Return the scallops to the skillet and toss them in the sauce for 1-2 minutes to coat.
- In a separate pan, prepare the cauliflower rice according to package instructions or sauté it in a bit of olive oil for about 5 minutes until tender.
- Serve the scallops over the cauliflower rice and garnish with chopped green onions.
