Ingredients

  • Fresh scallops - 300 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Red bell pepper - 1/2, julienned
  • Cauliflower rice - 200 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the scallops under cold water and pat dry with paper towels.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the scallops to the skillet and season with salt and pepper. Sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  5. Add the julienned red bell pepper and cook for another 2 minutes until slightly softened.
  6. Stir in the soy sauce and sesame oil, mixing well.
  7. Return the scallops to the skillet and toss them in the sauce for 1-2 minutes to coat.
  8. In a separate pan, prepare the cauliflower rice according to package instructions or sauté it in a bit of olive oil for about 5 minutes until tender.
  9. Serve the scallops over the cauliflower rice and garnish with chopped green onions.
