Ingredients

  • Whole chicken - 1 kg
  • Soy sauce (gluten-free) - 60 ml
  • Hoisin sauce (gluten-free) - 30 ml
  • Shaoxing wine - 30 ml
  • Honey - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon

Steps

  1. In a bowl, combine the soy sauce, hoisin sauce, Shaoxing wine, honey, five-spice powder, minced garlic, minced ginger, sesame oil, black pepper, and salt to create the marinade.
  2. Pat the chicken dry with paper towels and place it in a large resealable bag or a dish. Pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, ideally overnight.
  3. Preheat your oven to 200°C (400°F). Remove the chicken from the marinade and place it on a roasting rack set in a baking tray. Reserve the marinade for basting.
  4. Roast the chicken in the preheated oven for about 1 hour, basting with the reserved marinade every 20 minutes, until the skin is golden brown and the internal temperature reaches 75°C (165°F).
  5. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Garnish with chopped green onions before serving.
