Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Shiitake mushrooms - 50 grams, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, diced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 100 ml
  • Spring onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Toasted sesame seeds - 1 tablespoon, for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. In a claypot or a heavy-bottomed pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
  3. Add the sliced shiitake mushrooms, julienned carrot, diced bell pepper, and green beans to the pot. Stir-fry the vegetables for about 5 minutes until they begin to soften.
  4. Add the rinsed jasmine rice to the pot and stir well to combine with the vegetables. Pour in the water and vegetable broth, and add soy sauce, salt, and black pepper to taste.
  5. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid has been absorbed.
  6. Once cooked, turn off the heat and let the pot sit, covered, for an additional 5 minutes to allow the flavors to meld.
  7. Fluff the rice with a fork, and garnish with chopped spring onions and toasted sesame seeds before serving.
