Ingredients

  • Jasmine rice - 1 cup
  • Water - 1.5 cups
  • Halal chicken thigh, diced - 200 grams
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Spring onions, chopped - 2 stalks
  • Carrot, julienned - 1 small
  • Shiitake mushrooms, sliced - 50 grams
  • Chinese sausage, thinly sliced - 50 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the diced chicken with soy sauce, oyster sauce, sesame oil, minced garlic, and minced ginger. Let it marinate for at least 15 minutes.
  3. Drain the soaked rice and place it in a clay pot or a heavy-bottomed pot. Add 1.5 cups of water, a pinch of salt, and bring it to a boil over medium heat.
  4. Once boiling, reduce the heat to low and let it simmer for about 10 minutes without stirring.
  5. In a separate pan, stir-fry the marinated chicken until it's browned and cooked through, about 5-7 minutes. Remove from heat.
  6. After 10 minutes of simmering the rice, add the stir-fried chicken, sliced Chinese sausage, julienned carrots, shiitake mushrooms, and chopped spring onions on top of the rice.
  7. Cover the pot with a lid and continue to cook on low heat for another 10-15 minutes until the rice is fully cooked and has absorbed all the flavors.
  8. Turn off the heat and let it rest covered for 5 minutes before serving. Fluff the rice gently with a fork and serve hot.
