Ingredients

  • Wide rice noodles - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Bell pepper, sliced - 1 medium
  • Carrot, julienned - 1 medium
  • Snow peas - 100 grams
  • Green onions, chopped - 2 stalks
  • Soy sauce (Kosher) - 3 tablespoons
  • Oyster sauce (Kosher) - 1 tablespoon
  • Vegetarian protein (e.g., tofu or seitan) - 150 grams
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Soak the wide rice noodles in warm water for about 15 minutes until they soften, then drain and set aside.
  2. In a large frying pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, stirring until fragrant (about 30 seconds).
  3. Add the vegetarian protein and stir-fry for 3-4 minutes until lightly browned.
  4. Add the sliced bell pepper, julienned carrot, and snow peas to the pan. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
  5. Add the soaked rice noodles to the pan, followed by the soy sauce and oyster sauce. Toss everything together gently to combine, ensuring the noodles are coated in the sauce.
  6. Add the sesame oil, chopped green onions, and season with salt and pepper to taste. Stir-fry for another 2-3 minutes until everything is heated through.
  7. Remove from heat and serve hot, garnished with additional green onions if desired.
