Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 30 grams
  • Water - 300 ml
  • Salt - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Carrot - 1 small, julienned
  • Spinach - 50 grams, chopped
  • Mushrooms - 50 grams, thinly sliced
  • Soy sauce - 2 tablespoons (for serving)
  • Sesame oil - 1 teaspoon (for drizzling)
  • Spring onions - 1, finely chopped (for garnish)

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, water, and salt. Whisk until smooth and let the batter rest for 15 minutes.
  2. Prepare a steamer by boiling water in a pot. Lightly grease a flat, heatproof plate or a shallow dish with vegetable oil.
  3. Pour a thin layer of the batter onto the greased plate, ensuring it covers the bottom evenly. Place the plate into the steamer and steam for 3-4 minutes until set.
  4. Remove the plate from the steamer, and immediately place a layer of the julienned carrots, chopped spinach, and sliced mushrooms on top of the steamed batter.
  5. Pour another thin layer of the batter over the filling and return to the steamer for another 4-5 minutes until fully cooked.
  6. Carefully remove the plate from the steamer and let it cool slightly. Using a spatula, gently roll the cheung fun from one end to the other.
  7. Repeat the steaming process with the remaining batter and filling ingredients.
  8. Slice the rolls into pieces and serve with soy sauce drizzled with sesame oil and garnished with spring onions.
