Ingredients
- Rice flour - 100 grams
- Tapioca starch - 30 grams
- Water - 300 ml
- Salt - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Carrot - 1 small, julienned
- Spinach - 50 grams, chopped
- Mushrooms - 50 grams, thinly sliced
- Soy sauce - 2 tablespoons (for serving)
- Sesame oil - 1 teaspoon (for drizzling)
- Spring onions - 1, finely chopped (for garnish)
Steps
- In a mixing bowl, combine rice flour, tapioca starch, water, and salt. Whisk until smooth and let the batter rest for 15 minutes.
- Prepare a steamer by boiling water in a pot. Lightly grease a flat, heatproof plate or a shallow dish with vegetable oil.
- Pour a thin layer of the batter onto the greased plate, ensuring it covers the bottom evenly. Place the plate into the steamer and steam for 3-4 minutes until set.
- Remove the plate from the steamer, and immediately place a layer of the julienned carrots, chopped spinach, and sliced mushrooms on top of the steamed batter.
- Pour another thin layer of the batter over the filling and return to the steamer for another 4-5 minutes until fully cooked.
- Carefully remove the plate from the steamer and let it cool slightly. Using a spatula, gently roll the cheung fun from one end to the other.
- Repeat the steaming process with the remaining batter and filling ingredients.
- Slice the rolls into pieces and serve with soy sauce drizzled with sesame oil and garnished with spring onions.
