Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Soy sauce (gluten-free) - 3 tablespoons
  • Honey - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped for garnish
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. In a mixing bowl, combine soy sauce, honey, Shaoxing wine, five-spice powder, minced garlic, grated ginger, sesame oil, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat a charcoal grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Reserve the marinade for basting.
  5. Place the chicken on the grill and cook for about 6-8 minutes on each side, basting with the reserved marinade halfway through, until the chicken is cooked through and has nice grill marks.
  6. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Garnish with chopped green onions and sesame seeds before serving. Enjoy your Cantonese Charcoal Chicken!
