- Green cabbage - 200 grams, chopped
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Vegetable broth - 500 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Spring onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Tofu - 100 grams, cubed (optional)
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced carrots and mushrooms to the pot, cooking for another 3-4 minutes until slightly softened.
- Stir in the chopped cabbage, cooking for an additional 3-4 minutes until the cabbage begins to wilt.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low and simmer for 15 minutes.
- Add the soy sauce, salt, and black pepper to taste. If using, gently add the cubed tofu and heat through for 2-3 minutes.
- Finally, stir in the chopped spring onions just before serving.
