Ingredients

  • Green cabbage - 200 grams, chopped
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Vegetable broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Spring onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Tofu - 100 grams, cubed (optional)

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the sliced carrots and mushrooms to the pot, cooking for another 3-4 minutes until slightly softened.
  3. Stir in the chopped cabbage, cooking for an additional 3-4 minutes until the cabbage begins to wilt.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low and simmer for 15 minutes.
  5. Add the soy sauce, salt, and black pepper to taste. If using, gently add the cubed tofu and heat through for 2-3 minutes.
  6. Finally, stir in the chopped spring onions just before serving.
