Ingredients
- Green cabbage - 8 large leaves
- Brown rice - 100 grams (1/2 cup, uncooked)
- Mushrooms (shiitake or button) - 150 grams, finely chopped
- Carrot - 1 medium, grated
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onion - 2 stalks, finely chopped
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 250 ml
- Cornstarch - 1 tablespoon (optional, for thickening)
Steps
- Preheat the oven to 180°C (350°F).
- Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes until softened. Remove and set aside to cool.
- In a pot, cook the brown rice according to package instructions. Once cooked, set aside.
- In a pan, heat sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add the chopped mushrooms and grated carrot to the pan. Sauté for about 5-7 minutes until the mushrooms are cooked and any moisture has evaporated.
- In a large bowl, combine the sautéed vegetables, cooked rice, soy sauce, chopped green onions, salt, and pepper. Mix well to combine.
- Take a cabbage leaf and place about 2 tablespoons of the filling at the base. Fold in the sides and roll up tightly. Repeat for all leaves.
- Place the rolls seam-side down in a baking dish. Pour vegetable broth over the rolls and cover the dish with aluminum foil.
- Bake in the preheated oven for 25-30 minutes. If using cornstarch, mix it with a little water and add it to the broth halfway through to thicken it if desired.
- Remove from the oven and let cool for a few minutes before serving.
