Ingredients

  • Green cabbage - 8 large leaves
  • Brown rice - 100 grams (1/2 cup, uncooked)
  • Mushrooms (shiitake or button) - 150 grams, finely chopped
  • Carrot - 1 medium, grated
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onion - 2 stalks, finely chopped
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 250 ml
  • Cornstarch - 1 tablespoon (optional, for thickening)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Bring a large pot of water to a boil. Carefully remove the cabbage leaves and blanch them in the boiling water for 2-3 minutes until softened. Remove and set aside to cool.
  3. In a pot, cook the brown rice according to package instructions. Once cooked, set aside.
  4. In a pan, heat sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
  5. Add the chopped mushrooms and grated carrot to the pan. Sauté for about 5-7 minutes until the mushrooms are cooked and any moisture has evaporated.
  6. In a large bowl, combine the sautéed vegetables, cooked rice, soy sauce, chopped green onions, salt, and pepper. Mix well to combine.
  7. Take a cabbage leaf and place about 2 tablespoons of the filling at the base. Fold in the sides and roll up tightly. Repeat for all leaves.
  8. Place the rolls seam-side down in a baking dish. Pour vegetable broth over the rolls and cover the dish with aluminum foil.
  9. Bake in the preheated oven for 25-30 minutes. If using cornstarch, mix it with a little water and add it to the broth halfway through to thicken it if desired.
  10. Remove from the oven and let cool for a few minutes before serving.
