Cabbage and Mushroom Dumplings
These vegan cabbage and mushroom dumplings are a delightful blend of earthy mushrooms and crunchy cabbage, wrapped in tender dough and baked to golden perfection. Perfect for a cozy meal, they are not only satisfying but also packed with flavor.

Ingredients
- All-purpose flour - 150 grams
- Water - 75 milliliters
- Cabbage - 100 grams, finely chopped
- Mushrooms (shiitake or button) - 100 grams, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Cornstarch - 1 tablespoon (for dusting)
- Plant-based milk - 2 tablespoons (for brushing)
Steps
- In a mixing bowl, combine the all-purpose flour and water to form a smooth dough. Knead for about 5 minutes until elastic, then cover with a damp cloth and let it rest for 30 minutes.
- In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add the finely chopped mushrooms and cook for 5 minutes until they release moisture. Then, add the chopped cabbage, soy sauce, salt, and pepper, cooking for another 5-7 minutes until the cabbage is wilted. Stir in chopped green onions and remove from heat. Let the filling cool.
- Roll out the rested dough on a floured surface to about 2 mm thickness. Cut out circles (about 8 cm in diameter) using a round cutter.
- Place a tablespoon of the mushroom-cabbage filling in the center of each dough circle. Fold the dough over to form a half-moon shape and seal the edges by pinching them together.
- Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper and place the dumplings on it.
- Brush the tops of the dumplings with plant-based milk and sprinkle lightly with cornstarch.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp. Serve warm.
