Ingredients

  • Cabbage - 150 grams, finely shredded
  • Mushrooms (shiitake or button) - 100 grams, chopped
  • Carrot - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • All-purpose flour - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Bread buns - 2 pieces
  • Fresh cilantro - a handful, chopped (for garnish)
  • Cucumber - 50 grams, sliced (for topping)
  • Vegan mayonnaise - 2 tablespoons (optional)

Steps

  1. In a skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add chopped mushrooms and grated carrot to the skillet. Cook for about 5-7 minutes until mushrooms are softened.
  3. Stir in the finely shredded cabbage and soy sauce, cooking for an additional 5 minutes until the cabbage wilts.
  4. Remove the skillet from heat and let the mixture cool slightly. Once cooled, stir in cornstarch, all-purpose flour, black pepper, and salt until well combined.
  5. Form the mixture into patties, about 2-3 cm thick. You should get around 2-3 patties.
  6. In the same skillet, add a little more sesame oil and heat over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  7. While the patties are cooking, toast the bread buns until lightly browned.
  8. Assemble the burgers by placing a patty on each bun, topping with sliced cucumber, chopped cilantro, and vegan mayonnaise if desired. Serve immediately.
