- Jasmine rice - 1 cup
- Water - 2 cups
- Carrot - 1 medium, julienned
- Snow peas - 100 grams, trimmed
- Red bell pepper - 1 medium, diced
- Shiitake mushrooms - 100 grams, sliced
- Broccoli florets - 100 grams
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Fresh ginger - 1 teaspoon, grated
- Green onions - 2, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, heat sesame oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the shiitake mushrooms, carrots, and broccoli florets to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
- Stir in the diced red bell pepper and snow peas, cooking for an additional 2-3 minutes.
- Pour in the soy sauce, and season with salt and black pepper to taste. Mix well to combine all the ingredients.
- Fluff the cooked rice with a fork and add it to the vegetable mixture in the skillet. Toss gently to combine and heat through for another 2 minutes.
- Garnish with sliced green onions before serving.
