  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 teaspoon (optional, for thickening)
  • Water - 100 ml
  • Cooked rice or noodles - 200 grams (for serving)

Steps

  1. Press the tofu to remove excess moisture for about 15 minutes, then cut it into cubes.
  2. In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the tofu cubes to the pan and cook until golden on all sides, about 5-7 minutes.
  4. Stir in the sliced carrots, broccoli florets, bell pepper, mushrooms, and snow peas. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  5. In a small bowl, mix the soy sauce, water, and cornstarch (if using) to create a sauce. Pour this sauce over the stir-fried vegetables and tofu.
  6. Cook for an additional 2-3 minutes, stirring well to coat everything in the sauce and thicken it slightly.
  7. Serve hot over cooked rice or noodles.
