Ingredients

  • Firm tofu - 300 grams
  • Jasmine rice - 150 grams
  • Vegetable broth - 200 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, chopped
  • Carrot - 1 small, julienned
  • Snow peas - 100 grams
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
  2. While the rice is cooking, press the tofu to remove excess moisture, then cut it into 2 cm cubes.
  3. In a pan, heat sesame oil over medium heat and sauté minced garlic and ginger until fragrant, about 1 minute.
  4. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes.
  5. Stir in the soy sauce, vegetable broth, and season with salt and pepper. Bring to a simmer.
  6. Mix cornstarch with water to make a slurry, then add it to the pan to thicken the sauce, stirring well.
  7. Add the julienned carrot and snow peas, cooking for an additional 5 minutes until they are tender but still crisp.
  8. Once the rice is cooked, fluff it with a fork and serve it on plates topped with the braised tofu and vegetables.
  9. Garnish with chopped green onions before serving.
