- Firm tofu - 300 grams
- Jasmine rice - 150 grams
- Vegetable broth - 200 ml
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2, chopped
- Carrot - 1 small, julienned
- Snow peas - 100 grams
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions.
- While the rice is cooking, press the tofu to remove excess moisture, then cut it into 2 cm cubes.
- In a pan, heat sesame oil over medium heat and sauté minced garlic and ginger until fragrant, about 1 minute.
- Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes.
- Stir in the soy sauce, vegetable broth, and season with salt and pepper. Bring to a simmer.
- Mix cornstarch with water to make a slurry, then add it to the pan to thicken the sauce, stirring well.
- Add the julienned carrot and snow peas, cooking for an additional 5 minutes until they are tender but still crisp.
- Once the rice is cooked, fluff it with a fork and serve it on plates topped with the braised tofu and vegetables.
- Garnish with chopped green onions before serving.
