Ingredients

  • Beef short ribs - 500 grams
  • Soy sauce - 60 ml
  • Rice wine (or white wine) - 30 ml
  • Brown sugar - 1 tablespoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Star anise - 2 whole
  • Cinnamon stick - 1
  • Carrot - 1 medium, cut into chunks
  • Onion - 1 medium, chopped
  • Scallions - 2, chopped (for garnish)
  • Water - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 tablespoon

Steps

  1. Preheat your oven to 160°C (320°F).
  2. Season the short ribs with salt and black pepper on all sides.
  3. In a large, oven-safe pot or Dutch oven, heat the sesame oil over medium-high heat.
  4. Sear the short ribs in batches until browned on all sides, about 3-4 minutes per side. Remove and set aside.
  5. In the same pot, add the chopped onion, carrot, garlic, and ginger. Sauté for about 5 minutes until softened.
  6. Stir in the soy sauce, rice wine, brown sugar, star anise, and cinnamon stick.
  7. Return the short ribs to the pot and add water until the ribs are almost submerged.
  8. Bring the mixture to a simmer, then cover with a lid and transfer to the preheated oven.
  9. Braze in the oven for about 2.5 hours, or until the meat is tender and falls off the bone.
  10. Once cooked, remove the pot from the oven and let it rest for a few minutes before serving.
  11. Garnish with chopped scallions and serve with steamed rice or noodles.
