Ingredients
- Beef short ribs - 500 grams
- Soy sauce - 60 ml
- Rice wine (or white wine) - 30 ml
- Brown sugar - 1 tablespoon
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Star anise - 2 whole
- Cinnamon stick - 1
- Carrot - 1 medium, cut into chunks
- Onion - 1 medium, chopped
- Scallions - 2, chopped (for garnish)
- Water - 500 ml
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 1 tablespoon
Steps
- Preheat your oven to 160°C (320°F).
- Season the short ribs with salt and black pepper on all sides.
- In a large, oven-safe pot or Dutch oven, heat the sesame oil over medium-high heat.
- Sear the short ribs in batches until browned on all sides, about 3-4 minutes per side. Remove and set aside.
- In the same pot, add the chopped onion, carrot, garlic, and ginger. Sauté for about 5 minutes until softened.
- Stir in the soy sauce, rice wine, brown sugar, star anise, and cinnamon stick.
- Return the short ribs to the pot and add water until the ribs are almost submerged.
- Bring the mixture to a simmer, then cover with a lid and transfer to the preheated oven.
- Braze in the oven for about 2.5 hours, or until the meat is tender and falls off the bone.
- Once cooked, remove the pot from the oven and let it rest for a few minutes before serving.
- Garnish with chopped scallions and serve with steamed rice or noodles.
