- Dried sea cucumber - 100 grams
- Chicken broth - 250 ml
- Soy sauce - 2 tablespoons
- Shaoxing wine - 1 tablespoon
- Ginger - 1 tablespoon, sliced
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, chopped
- Star anise - 1 piece
- Brown sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Cornstarch - 1 teaspoon (mixed with 1 tablespoon of water for thickening)
Steps
- Soak the dried sea cucumbers in cold water for at least 8 hours or overnight until fully rehydrated.
- Rinse the sea cucumbers under cold water and cut them into halves lengthwise.
- In a pot, heat the sesame oil over medium heat. Add the ginger and garlic, sautéing until fragrant.
- Add the sea cucumbers to the pot and stir-fry for 3-4 minutes.
- Pour in the chicken broth, soy sauce, Shaoxing wine, brown sugar, and add the star anise. Bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 1 hour, stirring occasionally.
- After 1 hour, remove the lid and allow the sauce to reduce for another 10-15 minutes.
- Mix the cornstarch with water and stir into the pot to thicken the sauce. Cook for an additional 2-3 minutes.
- Serve hot, garnished with chopped green onions.
