Ingredients

  • Dried sea cucumber - 100 grams
  • Chicken broth - 250 ml
  • Soy sauce - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Ginger - 1 tablespoon, sliced
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Star anise - 1 piece
  • Brown sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 teaspoon (mixed with 1 tablespoon of water for thickening)

Steps

  1. Soak the dried sea cucumbers in cold water for at least 8 hours or overnight until fully rehydrated.
  2. Rinse the sea cucumbers under cold water and cut them into halves lengthwise.
  3. In a pot, heat the sesame oil over medium heat. Add the ginger and garlic, sautéing until fragrant.
  4. Add the sea cucumbers to the pot and stir-fry for 3-4 minutes.
  5. Pour in the chicken broth, soy sauce, Shaoxing wine, brown sugar, and add the star anise. Bring to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 1 hour, stirring occasionally.
  7. After 1 hour, remove the lid and allow the sauce to reduce for another 10-15 minutes.
  8. Mix the cornstarch with water and stir into the pot to thicken the sauce. Cook for an additional 2-3 minutes.
  9. Serve hot, garnished with chopped green onions.
