- Dark soy sauce - 20 ml
- Water - 200 ml
- Brown sugar - 1 tablespoon (15 grams)
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Star anise - 1 piece
- Cinnamon stick - 1 piece
- Green onions - 2 stalks, chopped
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.
- Increase the heat to medium-high and add the pork belly cubes, browning them on all sides, about 5-7 minutes.
- Once the pork is browned, reduce the heat back to medium and add the soy sauce, dark soy sauce, brown sugar, water, star anise, and cinnamon stick.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Let the pork simmer for about 60-70 minutes, stirring occasionally until the pork is tender and the sauce has thickened.
- Taste and adjust seasoning with salt and black pepper as needed.
- Remove from heat, discard the star anise and cinnamon stick, and garnish with chopped green onions before serving.
